Rosemary & Garlic Chicken Recipe


Amazingly tasty and yet still good for you; the perfect combination.


4 Chicken Breast Halves, boneless & skinless

1 Tbsp. Olive Oil

2 Garlic Cloves, peeled and cut in half lengthwise

1/2 Cup Low-Sodium Chicken Broth

1/2 Cup Sherry Vinegar

1 tsp. Kosher Salt

Freshly Ground Black Pepper

1 Tbsp. Fresh Rosemary

1 Tbsp. Unsalted Butter


Directions:

Pound the chicken between two sheets of wax paper with a rolling pin, until they are all the same thickness.


In a large skillet, heat the olive oil and garlic, over medium-high heat, until the garlic browns.  Add the chicken, cooking 5 minutes on one side, and flipping and cooking for another 5 minutes.


Add the broth, vinegar, salt, pepper, and rosemary.  Cover and reduce the heat to medium-low, for 3 minutes.


Remove the chicken, and increase the heat to high, and let the sauce boil for 4 minutes.  Add the butter and whisk, and pout the sauce over the chicken.
